It’s being a longgggg ride but we finally made it! Our adorable – and alternative – vegan restaurant is now officially open!

All our dishes are 100% plant based and high in protein and vitamins. Our menu includes appetizers, salads, sandwiches, entrees, smoothies, delicious desserts and daily surprises!!! We also carry a huge selection of Premium Czech beers and of course Vegan Certified Wine. We also serve amazing cocktails (Strawberry mojito anyone?) We are open Tuesday to Saturday, 6pm to 3am and we serve coffee, food and drinks under the sounds or classic rock music (we love the sound of Grateful Dead, Johnny Cash and Neil Young) . If you are in town, stop by and say hi! And grab something to eat too!

breakfast: vanilla coffee pudding

Like most people, I usually start my day with a cup of coffee. And something quick for breakfast. {And a big big green smoothie. } And as the carnation instant breakfast is not good for me (I am sorry but I’ve been watching way too many old commercials on youtube lately) I came up with this quick and delicious tofu vanilla coffee pudding – for breakfast. Who needs a cup of coffee anyway? I do. And a spoon.

vanilla coffee pudding

Ingredients

1 box firm silken tofu
1 1/2 ts vanilla extract
1 TS agave nectar
1 ts instant coffee
cocoa powder to garnish

Blend the tofu, vanilla extract and agave nectar in a food processor.  Take 3 TS of the mixture, place it in a small bowl, add the instant coffee and mix well.  Pour some of the vanilla mixture into a small serving bowl, add 1 TS of the coffee mixture and continue filling the bowl with the vanilla mixture. Dust the top with cocoa powder. Recipe makes 3 servings. Enjoy!
