VegLite – Healthy Vegan Recipes

Hi! My name is Dimitra and I live in Athens, Greece, with my American husband (Sean) and my awesome cats – Peanut & Almond)! In daily basis you can find me working and cooking at the ImproV, the only Vegan Restaurant in Athens. If you are in town, stop by and say hi! Eat or drink something. Play with our cats and enjoy the music and atmosphere!

This is my blog through which I will be sharing with you my favorite vegan recipes. Eating healthy vegan food is the only choice for me. I went vegetarian in 2006 and vegan few months later. It was a decision I took when Peanut got really sick and had to do 6 surgeries in one year period. I was so depressed during that time and it got me thinking. Why do I love one animal and eat another? So that was it! I don’t eat, wear or use any animal product. I am vegan and I can’t think of any reason that I shouldn’t be!

This isn’t a fat free cooking blog. I believe that vegan food is great for our health. Animal foods are higher in fat than plant foods. No need to mention that they are packed with saturated fats and cholesterol. Meat and dairy is also responsible for cancer, osteoporosis, diabetes, arthritis and many many more diseases. So, what else? I love almonds and coconuts. And avocados!  Some of you might say these are high in fat, so maybe not that healthy! Yet it is healthy unrefined fat that our bodies need in order to get the essential fatty acids.

Besides cooking vegan food, I love books, movies and rock music. And traveling. Meowww

  9. So glad to find your blog! I’m Greek too and planning on coming to Greece in the summer with my family. I was wondering how easy is it to find things like tofu or flax seed, cocconut or soy milk and the like in Greece. Are they only in specialty stores in Athens or can be available in national super market chains? Thanks! Katerina.

  13. Finally, I found a vegan Greek food blog! Ever since going to Greece I’ve fallen in love with Mediterranean food, but haven’t been successful in finding veganised versions of what I had there(since I went pre-vegetarianism). You have no idea how much finding a vegan recipe of a Greek souvlaki and tzatziki has made my day!
