I was supposed to do this giveaway to celebrate my 1.000 facebook fans but as some of you may know, my laptop crushed, my hard disk died and I lost all recipes I was working on during the past month, plus all my latest photos.
Anyway it’s better late than never, so I am doing this for the 1.500 facebook fans! I love interacting with you all, listening to your ideas and comments and learning from you. Thank you so much for everything!
So, few months ago I received my copy of Lindsay’s Nixon book “The Happy Herbivore“. I have to tell you that I love love love this book. It contains over 175 delicious fat-free and low-fat vegan recipes. Recipes that are easy to make and that require every day ingredients. Nothing is complex in this cookbook. Another plus is the amazing photographs! I don’t know about you, but I get more inspired to cook something from a cookbook when there is a photo of what my dinner will look like. All photos in Lindsay’s book are AMAZING!
The first recipe I tried was the Nomelet. This was a delicious baked omelet which I enjoyed with Greek salad (minus the feta cheese) on the side.
The next one was the cinnamon-banana toast crunch. Light, crispy and delicious breakfast. I enjoyed that with some homemade blueberry sauce and rice milk – both again from the happy herbivore cookbook.
My favorite dish from the whole cookbook is definitely the Red Lentil Dal. It’s very easy, fragrant and delicious.
Another favorite is the “Tuna” salad. It’s base is chickpeas and kelp and it tastes amazing in a sandwich or wrap.
For my sweet tooth I tried the chocolate chip cookies but instead of sugar I used light agave nectar. These are for sure the best low-fat chocolate chip cookies I ever had. Especially while they were still hot out of the oven.
And this is the No-Chicken Broth Powder. I actually doubled the recipe and I use it pretty much in every soup or stew I make.YOU MUST TRY THIS.

These recipes all look so great, while I’m not completely vegan (I eat fish to make up for the fact that I am grain and legume free) – I eat vegan most of the time and I’m always looking for new recipes!
