My husband is actually crazy about pizza. Not any kind of pizza. Crazy about the New Jersey style pizza.Since he moved to Greece he never had a really good pizza. Well, there is that place that makes quite decent pizza but it has nothing to do with the New Jersey style pizza. Few months ago we bought a nice professional kenwood mixer. He made pizza a couple of times, I made bread a couple of times and then it just sat on the table… for weeks.

Few days ago while reading Veggie Wedgie’s blog I remembered her bloging about this recipe she adopted from ethical pizza and I thought to give it a try. It turns out to be the best pizza I’ve ever had. And the best pizza Sean had since he moved to Greece. And we absolutely love it! I made it twice this week. And I am sure I will be making it many many more in the near future. I topped the pizza with home-made pizza sauce, daiya cheese, mushrooms and fresh ground pepper and garlic! yum yum

chocolate blueberry cupcakes

Tonight we are hosting a collective vegan cooking meet up! there will be lots of great vegan food, a movie and desserts. Drinks later… margarita here I come :-)

I just made these chocolate cupcakes – adopted from vegan cupcakes take over the world and as I wanted to make them more healthy I replaced the all purpose flour with whole wheat pastry flour, instead of powder sugar I used 1/2 cup raw cane sugar and olive oil instead of canola oil.

For the frosting I used 1 cup non hydrogenated  vegan margarine, 1 cup blueberries and 1/2 cup raw cane sugar. Aren’t they cute?

chili rice burgers

I made a huge pot of chili the other night and I ended up with quite a bit of leftovers… I changed my mind about 10 million times on what to do with it. I thought of tacos, burritos, jacket potatoes with chili stuffing, dosadillas, lasagna and I came up with these chili rice burgers. There is no actual recipe for these. I used my chili leftovers, I added 1 cup of brown rice in it, cooked it for 20 minutes until the rice absorbed all the chili liquid, shaped in burgers and froze them. When you decide to eat them grill them for 10 minutes or fry them for 4.
