Fava is a dish that you can find at all the traditional Greek taverns during the whole year and at every single restaurant during the fasting periods. The good thing is that the lent period (fasting) in Greece is almost 3 months a year! How great is that! Tomorrow is the first day of the fast of Dormition of Theotokos (Virgin Mary) that lasts for 15 days and I noticed that many people bought fava beans at my husband’s store. My husband really loves the traditional fava, served with olive oil and chopped red onion but I thought that this time I should give it a twist. I mixed a cup of fava beans with half cup of red lentil, boiled it and added some coconut milk. I served it with aromatic jasmine rice and the smell was super amazing!
Ingredients
1 cup of fava beans
1 cup of rent lentil
1 small onion chopped
1 carrot chopped
2 cloves of garlic
2 T.S. coconut oil
1/2 t.s. salt
1/2 t.s. garam masala
1/2 cup lite coconut milk
5 cups of water
In a big pan heat the coconut oil and saute the onions and garlic for 5 minutes. Add the garam masala and salt and mix for 2 more minutes. Add the fava beans, red lentil, carrot and water and cook for 20-30 minutes. Once starts boiling lower the heat. If needed add more water. At the end add the coconut milk, stir and let it sit for few minutes. Puree with an immersion blender and serve with chopped onion. Fava makes a great appetizer or side dish!
