Fava is a dish that you can find at all the traditional Greek taverns during the whole year and at every single restaurant during the fasting periods. The good thing is that the lent period (fasting) in Greece is almost 3 months a year! How great is that! Tomorrow is the first day of the fast of Dormition of Theotokos (Virgin Mary) that lasts for 15 days and I noticed that many people bought fava beans at my husband’s store. My husband really loves the traditional fava, served with olive oil and chopped red onion but I thought that this time I should give it a twist. I mixed a cup of fava beans with half cup of red lentil, boiled it and added some coconut milk. I served it with aromatic jasmine rice and the smell was super amazing!

Ingredients

1 cup of fava beans
1 cup of rent lentil
1 small onion chopped
1 carrot chopped
2 cloves of garlic
2 T.S. coconut oil
1/2 t.s. salt
1/2 t.s. garam masala
1/2 cup lite coconut milk
5 cups of water

In a big pan heat the coconut oil and saute the onions and garlic for 5 minutes. Add the garam masala and salt and mix for 2 more minutes. Add the fava beans, red lentil, carrot and water and cook for 20-30 minutes. Once starts boiling lower the heat. If needed add more water. At the end add the coconut milk, stir and let it sit for few minutes. Puree with an immersion blender and serve with chopped onion. Fava makes a great appetizer or side dish!

grilled tofu

This is not a real recipe. I hear that many people don’t like tofu. But I am sure that whoever says “I don’t like tofu” never had it nice cooked and marinated.  It’s true that natural tofu has no taste but it sucks the aroma and flavor from whatever you cook it or marinate it with. This is one of my favorite marinates for grilled tofu. I used my tofuXpress to remove the water. TofuXpress is definitely my favorite gadget in the kitchen (along with my blender of course).

Ingredients

1 block of firm tofu (pressed/drained)

1 T.S. olive oil

1 T.S. soy sauce

1 t.s. liquid smoke

1/2 t.s. salt

1/2 t.s. dried oregano

1/2 t.s. dried parsley

1/4 t.s. fresh pepper

a pinch of dried thyme

Marinate the tofu for at least 2 hours and grill each side for 7-8 minutes. Serve with veggies of your choice.

I served mine with steamed broccoli and baby carrots

edamame with tofu & figs

We really enjoyed this dish. A very refreshing meal, full of protein and iron and fruity taste. Ridiculously easy to make, all you need is tofu, steamed edamame beans and figs.

Ingredients

1 package silken firm tofu like mori-nu
500 grams edamame beans
6 dried figs
2 T.S. soy sauce
1 T.S. rice vinegar
1 T.S. sesame seeds
1 T.S. sesame oil
1/2 t.s. salt
1/4 t.s. ground ginger

Soak the figs for about 3 hours, place in a steam basket and steam for 20 minutes. Steam the edamame as well, let cool, open the pods and pop out the beans. Crumble the tofu and slice the figs in small pieces. To make the dressing mix the soy sauce, sesame oil, rice vinegar, salt, ground ginger and sesame seeds. Place the edamame, tofu and figs in a serving bowl and top with the dressing. Serve cold.
